The Association Built Its Year-Opener Around Five Objectives
The Specialty Food Association dates Winter FancyFaire 2027 to 17-19 January at Moscone Center in San Francisco. The association calls the show the first industry event of the year.
Its About page answers its own question, Why Did SFA Create Winter FancyFaire, with two reasons. Members, show attendees and others asked for something different from the association's first-of-the-year event. The specialty food industry and the people in it are changing.
Bill Lynch, SFA president, put the launch in maker terms in the association's release of 20 January 2025: "Innovation is the lifeblood of the CPG industry, and the mission of SFA is to help that innovation come to market."
Five Objectives, Each With a Definition
A block on the About page, headed Winter FancyFaire Was Created Around Five Strategic Objectives, lists each objective with its definition.
Elevate the Ecosystem targets value for every participant. Transform Trends begins with the Trend of the Year announcement. Level-Up Local harnesses the local food community and culture. Simplify to Sensationalize targets the barriers to ROI and ROT. Feel the Fancy covers the extra opportunities organised around doing business.
The same release ties the format to audience data. Phil Robinson, SFA senior vice president of member development, cited a Freeman Trends Report that puts Millennials and Gen Z at 75 percent of the U.S. workforce by 2030. He listed their expectations of a trade show: experiential product discovery, trends identified before the mainstream, immersion in local culture, and data-driven wayfinding, matchmaking and socialising.
The Moscone Footprint
The show page puts the exhibit floor at 135,450 square feet and the exhibitor count above 1,000, with 310 of them first-time.
Moscone's event feed holds the booking as record nid 861, dated 17-19 January 2027 and assigned to Moscone North and South.
Two neighbours share the month. The ASCO GI Cancers Symposium holds nid 857, dated 21-23 January in Moscone West. SPIE Photonics West holds nid 858, dated 30 January to 4 February across the campus.
All three records carry the feed's Conv / Tradeshow category. No record carries an attendance forecast.
Two San Francisco Editions, Then San Diego
The future-dates block reads 23-25 January 2028 in San Francisco and 14-16 January 2029 in San Diego.
The 2029 date returns the show to its first city. The association's launch release dates the debut to 11-13 January 2026 at the San Diego Convention Center.
Every published edition opens on a Sunday and closes on a Tuesday. The 2026 run was 11-13 January. The 2027 run is 17-19 January, 2028 runs 23-25 January, and 2029 runs 14-16 January.
The opening Sunday moves through the month. It is the second Sunday of January in 2026, the third in 2027, the fourth in 2028 and the second again in 2029.
Three hundred and sixty-nine days separate the 2027 close from the 2028 open. The 2028 close to the 2029 open is 355 days.
What the Venue Pattern Signals
The show books two consecutive January weeks at Moscone and then leaves the building. A west-coast trade calendar that plans around it holds a San Francisco booking in 2027 and 2028 and a San Diego booking in 2029.
The Moscone turn is tight. Winter FancyFaire closes on 19 January, ASCO GI opens two days later, and the two bookings sit in different halls. SPIE Photonics West then runs six days across the campus from 30 January.
Moscone's FAQ states that over 20,000 hotel rooms sit within walking distance of the centre. That is the base a January citywide calendar draws on.
What the Record Leaves Open
The future-dates block names two cities and no venue for either one.
No edition past 2029 is dated.
The association publishes no contract term for the show. The venue feed carries no attendance forecast against the booking.
