Adina Opens Two Sydney Restaurants in a $100 Million Refit

TFE Hotels has opened Shoreline Kitchen at Adina Sydney Darling Harbour and Bar Benevento at Adina Sydney Town Hall inside a $100 million refit of the Adina brand.

Adina has added two Sydney dining venues in one announcement. TFE Hotels opened Shoreline Kitchen at Adina Sydney Darling Harbour and Bar Benevento at Adina Sydney Town Hall. Both sit inside the group's more than $100 million investment in repositioning the Adina brand.

eHotelier published its item on 7 October 2026 at 11.40am. The Hotel Conversation carried the same TFE statement on 6 October 2026.

Shoreline Kitchen at the 114-Room Flagship

Shoreline Kitchen seats 60 diners on the ground floor at 60 Lime St. The hotel carries 114 rooms at 55 Shelley Street, King Street Wharf. The eHotelier block lists the venue open seven days a week from 7am.

Executive Chef Evan Prayogo runs the kitchen. He carries more than 15 years in Australian hospitality and studied architecture before he moved into kitchens. The venue supplies room service, poolside dining and catering for the hotel's meetings and events.

Bar Benevento Takes the Town Hall Corner

Bar Benevento occupies the ground floor at 511 Kent St, on the corner of Kent and Bathurst streets, inside the 144-key Adina Sydney Town Hall. That hotel completed an extensive refurbishment in 2025. Service runs Monday to Friday from 7am to 3pm, and weekends and public holidays from 7am to 11.30am.

The Brothers Behind Bar Benevento

Anthony and Julian Izzillo run Bar Benevento with Kosta Papanikitas. The brothers opened de Vine Food and Wine in Sydney. Head Chef Tim Fisher runs the kitchen. The name comes from Benevento, the Campanian city where the brothers' father was born. Strega liqueur runs through the food and cocktail lists, and the wine list covers all 20 Italian regions.

Bates Smart Led the Refit

Bates Smart led the Darling Harbour transformation, and Brenton Smith led the design narrative. The scheme draws on the seafoam greens and blues of Sydney Harbour, with floor-to-ceiling windows and balconies. Every guest room carries a kitchen and laundry.

The hotel reopened on 3 August 2026, 26 years after it opened ahead of the Sydney 2000 Olympic Games. TFE Hotels' group chief operating officer, Chris Sedgwick, said food and beverage carries a key role in the brand's evolution.

The Two Opening Dates

Shoreline Kitchen began service with the hotel reopening on 3 August 2026. Bar Benevento opened in late September 2026. The 6 and 7 October coverage follows both dates.

What the Announcement Does Not Carry

The announcement carries no cover charge, no menu price, no room rate and no revenue figure for either venue.
