The Savoy to open Beaufort Wine Bar with more than 250 wines

Beaufort Wine Bar opens at The Savoy in October with more than 250 wines from 18 countries, a Coravin by-the-glass programme, tableside carving and live music.

The Savoy will open the Beaufort Wine Bar this October. The London hotel describes the venue as a wine destination with more than 250 wines from 18 countries.

A wine bar for The Savoy, opening in October

The venue is built for guests who want to sample wines, according to the hotel. The Savoy's own page lists opening hours of Tuesday to Saturday, 5.00pm to late, and records a bespoke vinyl setup at the bar.

More than 250 wines from 18 countries

The list carries more than 250 wines from 18 countries across six continents. The hotel describes the by-the-glass offer as one of the UK's largest wine-by-the-glass programmes. The trade outlets that reported the venue in September carried the same figures. Restaurant Online and Harpers Wine & Spirit read 250 wines from 18 countries, and Hospitality & Catering News read more than 250 wines from 18 countries.

Coravin, and half the list by the glass

Around half of the collection will be available by the glass using Coravin technology, which lets guests sample rare and vintage wines without ordering a full bottle. The list spans 50 years, with vintages from 1975 to 2025, and includes First Growth Bordeaux, Grand Cru Burgundy, mature Champagne and wines from lesser-known regions.

Fifty years of vintages, and grape-based spirits

The spirits list focuses on grape-based spirits including Cognac, Grappa and Pisco, alongside wine-based cocktails. The two lists sit together as one offer.

Tableside carving and live music

The food menu features sharing dishes built to complement the wine list: artisan cured meats, hand-carved Jamon Iberico served from a custom-made flywheel slicer trolley, and a selection of British cheeses. The Savoy said the bar will also feature live music through the evening. Restaurant Online reported a further set of dishes, including Hampshire trout with Dorset wasabi, a black truffle cheese fondue and a caviar selection.

Romain Audrerie leads the wine programme

Romain Audrerie, head sommelier at The Savoy, will lead the wine programme. He has more than 15 years of international hospitality experience and was part of the opening team at Chiltern Firehouse before becoming global wine director for Andre Balazs Properties. The Savoy's own page ties his programme to the Coravin by-the-glass service.

Where Beaufort sits in the hotel

Beaufort Wine Bar sits within The Savoy's restaurants and bars. It adds a drinks-led room built around a sampling programme, run across a list that reaches from current releases back to wines from the mid-1970s.

The format is a list-led bar. The wine and the grape-based spirits carry the offer, and the food menu is written as a complement. The Savoy's own page confirms the tableside carving, the live music and the Coravin by-the-glass programme. The hotel has not said how many covers the room holds.

What the announcement does not state

The hotel has not published the exact opening day inside October, and it has not released the full wine list. Restaurant Online reported the venue on 4 September 2026, Harpers Wine & Spirit on 7 September and Hospitality & Catering News on 6 September, all ahead of Hotel Owner's 30 September report.
